In a village of Romagna, in the historical centre of Sogliano al Rubicone, since ages Mengozzi family is using its tufaceous pits , named “antiche cave” to store the best local cheeses and to recover them only 3 months later, producing this way the great product named “formaggio di fossa”. The peculiar climatic conditions, the jealously kept secret preparation method, the experience, the caring passion of the owners of the old caves, directly descending from the Mengozzi family, are making of this product something unique and unrepeatable.
